How did you learn that you were this year’s 2017 honoree? How did you celebrate the announcement?
The President of James Beard Foundation, Susan Ungaro, was kind enough to reach out and share the exciting news. IΓÇÖm thrilled be part of Chefs & Champagne, as it’s really one of the highlights of the summer among chefs and foodies.
What does it mean to be a James Beard winner?
Looking at the list of the previous recipients, I feel very humbled to be a part of such an inspiring, diverse group. The Beard Foundation plays an important role in the culinary industry, and to join the ranks with other esteemed chefs is very meaningful.
Are any of your chef pals participating in this year’s event? Which chefs’ table will you be hitting?
ItΓÇÖs very hard to narrow it down as there are so many exciting chefs that will be there. My good friend Alex Guarnaschelli is a canΓÇÖt-miss for me, IΓÇÖm also impressed by what Stephan Bogardus has done at the North Fork Table, and Greg Baxtrom from Olmsted is killing itΓÇªlike I said there are too many to choose from!
What’s your go-to summer dish for 2017?
IΓÇÖm from a fishing village in Sweden and grew up eating a lot of fish, especially in summer. I still tend to eat more fish than meat in the summer and go for seasonal vegetables. One of my gotos is grilled herring with roasted potatos, chives and shaved fresh horseradish.
