Monday Motivation In Esther Yang’s Kitchen

It’s Monday, time to enter Esther Yang’s Kitchen, where we can all learn how to create fast, easy, tasty healthy food with five ingredients or less.

Esther is the amazing executive director of Super Happy Healthy Kids, a non-profit that fights again child bullying and encourages youth to become the best versions of themselves through yoga, meditation and other healthy outlets. Esther, who’s currently running for New York District Leader 76, preps dishes for carnivores, herbivores and omnivores, so everyone can find something to dig into!

Esther’s Healthy, Easy And Quick Dish Of The Day

Today it’s all about tofu with salt and black and red pepper. If you don’t like spicy food, you can forget the red or black pepper just add salt. It will taste as good. I’m supporting Patrick Mock of 46 Mott Street. Patrick fed seniors hot meals for FREE during the pandemic. Will Smith donated money for his effort and Alicia Keys gave him a shout-out. Yes, that famous Will and Alicia.

My daughter and I do our food shopping at 46 Mott every time we visit Chinatown and always overtip them for all their hard work. For takeout they have chicken shumai, soft tofu (one of my faves), chicken, vegetables, pork sticky rice, dumplings, chicken and pork buns. Grace buys tons and puts them in her freezer. They also have the best soy milk and herbal drinks.

Here’s The Recipe

1. Cut the tofu into cubes.

2. Heat the olive oil and gently put the tofu. Cook till browned. (2/3 minutes on each side). Tofu has tons of water, so try to flip it only once. Be careful! The water from the tofu might splatter. You know what they say about oil and water not mixing well. I found my splatter top in Chinatown. Chinatown has the best bargains — so fun to shop!

3. Add the salt, black and red pepper + cut up spring mix before serving. Yes, I only buy multi-purpose veggies that I can use as salad and cook as well. Enjoy this tasty, vegan dish!
